Shepherd's Pie
I don’t have time to make complex meals, I need to be in and out of the kitchen as quickly as possible, but that doesn’t mean I can’t make a healthy and nutritious meal! Serves 6-8 people
Ingredients
1 medium brown onion
1 tsp. extra virgin olive oil
1 clove of crushed garlic
500gram Lean Beef Mince (Heart Smart 5 star)
700grams Passata Sauce (low sodium/low sugar)
1 large Zucchini
1 large Carrot
2 cups of frozen peas
1 small red capsicum
200 grams of sliced button mushrooms
approx. 6 medium potatoes
approx. 1 cup of milk of your choice
½ cup low fat grated cheese
Method
Preheat oven to 180 degrees Celcius
Place olive oil in saucepan and brown onion and garlic
Place mince into saucepan and cook until brown
Add the Passata sauce and stir through
Cut your veggies (zucchini, carrots, capsicum and mushrooms) up into cubes, and add into the saucepan as well as the frozen peas and allow to simmer for 15 minutes.
Place the meat and veg mixture into a casserole dish (one that resembles a pie dish) and spread out evenly
Steam your potato (I like to do it over the stovetop) and once soft take off the heat and mash it up, add milk to give it a smooth, creamy consistency
Spread the mashed potato over the meat and veg mixture to create a top layer
Sprinkle grated cheese over the top and place in the oven until the potato and cheese crisps up (approx. 15-20minutes)
It can be served with a salad or steamed/roast vegetables!
