Shepherd's Pie

I don’t have time to make complex meals, I need to be in and out of the kitchen as quickly as possible, but that doesn’t mean I can’t make a healthy and nutritious meal! Serves 6-8 people

Ingredients

  • 1 medium brown onion

  • 1 tsp. extra virgin olive oil

  • 1 clove of crushed garlic

  • 500gram Lean Beef Mince (Heart Smart 5 star)

  • 700grams Passata Sauce (low sodium/low sugar)

  • 1 large Zucchini

  • 1 large Carrot

  • 2 cups of frozen peas

  • 1 small red capsicum

  • 200 grams of sliced button mushrooms

  • approx. 6 medium potatoes

  • approx. 1 cup of milk of your choice

  • ½ cup low fat grated cheese

Method

  • Preheat oven to 180 degrees Celcius

  • Place olive oil in saucepan and brown onion and garlic

  • Place mince into saucepan and cook until brown

  • Add the Passata sauce and stir through

  • Cut your veggies (zucchini, carrots, capsicum and mushrooms) up into cubes, and add into the saucepan as well as the frozen peas and allow to simmer for 15 minutes.

  • Place the meat and veg mixture into a casserole dish (one that resembles a pie dish) and spread out evenly

  • Steam your potato (I like to do it over the stovetop) and once soft take off the heat and mash it up, add milk to give it a smooth, creamy consistency

  • Spread the mashed potato over the meat and veg mixture to create a top layer

  • Sprinkle grated cheese over the top and place in the oven until the potato and cheese crisps up (approx. 15-20minutes)

  It can be served with a salad or steamed/roast vegetables!
