Zucchini Fritters
This is a super easy recipe that doesn’t need many ingredients, you could use any leftover vegies from your fridge and it makes for a great meal that can be eaten for lunch or dinner!
Makes approx 10 Fritters
Ingredients
2 x large zucchini
1 x carrot
2 x eggs
¾ cup wholemeal flour
1 tablespoon parmesan cheese
pinch of chilli flakes
Method
Grate your zucchinis and carrot. After grating, squeeze out excess water in your hands over a sink and then place on some paper towel. Zucchini and carrot holds a lot of water which can be a challenge when getting them to cook so it's important to squeeze out excess fluid!
Mix all of the ingredients together in a bowl and lightly spray a medium hot pan with extra virgin olive oil. Don’t have the pan too hot or else they will cook on the outside and not in the middle.
Place the mixture in little balls and flatten out! Cook until golden brown on each side.
Serve them with a green salad, or add chickpeas or your favourite can of tuna to the mixture for protein. If you need a sauce, find one that is low in salt, sugar and fat, such as a chobani tzatziki dip or reduced salt salsa.
